Pastel de Tres Leches

Lottie is a good friend and a guest cook on our blog. You’ll see many more posts from her hopefully. Unlike us who just eat, she MAKES!

“Inspired by my online mentor in all things pastry ‘Not Quite Nigella’.  Forget the proper translation (a very literal ‘three milk pastry’), just think HEAVEN!….particularly if your sweet tooth is as long as my husband’s. Soaked in three different milks (all of the very sweet variety!).  Coated with vanilla cream.  Then topped with pomegranate seeds….what a great Sunday afternoon.”

Whipping the cream… ummmm I never think you can have too much

Soaking one half of the cake with evaporated milk, sweetened condensed milk, double cream and rum.  Calories?  No!

Sandwiching both soaked sides of together with vanilla whipped cream inbetween.  Rich, luscious and very naughty.

They look so great that I have some regret that I was munching a sunday roast, rather than nibbling these cakes with you! We had a narrow window of opportunity to get there, and missed it. Such a shame! Was it easy to do Lottie?? Do you need to try it again…hint hint? ;-)
