Mama Hue’s Kitchen

This week it’s Princess Lottie’s uglier half giving you a taste of what it was like to grow up in Mama Hue’s kitchen.  Strong aromas (!), fresh ingredients, and flavours that packed a whole lot of punch: that was Mama’s trademark.  And the in-laws certainly approved on Saturday when we cooked up this Vietnamese inspired feast.  Credit also goes to Mr Ramsey’s Chinese five-spiced pork for leaving the in-laws thoroughly fed and ready to burst, but it was really Princess Lottie’s chocolate delight in a box that made us roll them out of here…
PS:  if you want to taste Mama’s home recipes, just give us a shout.  I’m sure she’ll be on the first plane over here!

Home made spring rolls. A combination of pork, , onions, a little seasoning and a splash of fish sauce. Fried till golden brown and ready to eat!

A favourite of mine growing up… ‘Goi’ . All freshly chopped and dressed with lemon juice, chili, pepper and fish sauce (yes, she likes her fish sauce!).

From a different type of kitchen. This is a lush Chocolate mousse in a tuile box with fresh raspberries and vanilla cream. Princess Lottie strikes again!

heard of those, but I do have plants fr nitteras and the biomedia for the ammonia and nitrite.And judging by my water tests this morning, the media I had is still living. Ammonia is 0 in both tanks, nitrite is 0 in both tanks and nitrate is high in both tanks, but I will be doing a water change later today to fix that. The nitteras are 40-80ppm, so its higher than I normally let it get, but not what I would think is deadly. Thanks for the comments everyone
