Thank you for the Bread Intensive and the Baking Page!I’ve baked baguettes about five times now since theIntensive, and each time they get betetr. The first loaves, when I followed the recipe most diligently, were the least satisfactory. The dough rose only minimally, and the bread was a little dense.So I began to deviate. And here’s what I’ve learned from my successive experiments:My dough is happier made with 1-1/2 cups of water.My San Francisco kitchen is drafty and cool, and my dough rises best in an enclosed space like the microwave.I only get two baguettes from this recipe, not three.It takes my oven 25 minutes to get the bread to 205-210ba.
