Princess Lottie has cooked up these delightful morsels… I’ll bet the team at work are gonna love ‘em!
With a substantial supply of chocolate in the cupboard plus my husband’s love of macadamia nuts… I just had to succumb to the cookie urge.
THE RECIPE
100g unsalted butter, softened
70g caster sugar
70g demerara sugar
1 medium free-range egg
100g white chocolate, chopped into small chunks
100g macadamia nuts, roughly chopped
170g plain flour½ tsp baking powder
50g dark chocolate (70% cocoa solids)
METHOD
Cream the butter and both sugars until they become pale and fluffy. Mix in the egg then the white chocolate and macadamia nuts. In a separate bowl, combine the flour and baking powder then gently mix into the butter/sugar mixture. Mix until just combined then roll into a sausage shape and refrigerate until firm.Preheat the oven to 180C. Slice the roll of dough into 12 slices and place on a tray lined with baking paper. These expand so ensure you leave a couple inches between biscuits. Bake for 15-20 minutes until the cookies are a light-golden colour.
Let the biscuits cool.
Place the dark chocolate into a heatproof bowl over a pan of simmering water being careful not to let the bowl touch the water. Simmer very gently until the chocolate has melted, then remove from the heat.
Using a spoon, drizzle the chocolate over the cookies. Once the chocolate has set…. Devour!
